Banana
Oatmeal Muffins

Ingredients:

• 1 cup Oat Flakes
• 1 cup Organic Milk
• 2 cups Hockley Valley Premium Light Spelt Flour
• ½ cup White sugar
• 5 teaspoon Baking powder
• 1 teaspoon Salt
• ½ teaspoon Cinnamon
• ¼ teaspoon Nutmeg
• ½ cup Margarine melted and cooled
• 2 Eggs
• 1 teaspoon Vanilla
• 2 cups Mashed bananas (4-5 medium)

Instructions:

• Combine oat flakes and milk and set aside
• In a large bowl, mix flour, sugar, salt, baking powder, cinnamon and nutmeg.
• To soaked mixture, add melted margarine, eggs, vanilla, and bananas
• Add wet mixture to dry ingredients and stir only until the flour is moistened
• Fill greased muffin cups and bake at 375° for 20 minutes

Yield: 14-18 large muffins.
