Autumn Apple
Spelt Cake
Ingredients:
• 1/2 cup lard
• 2/3 cup unsweetened applesauce
• 1/3 cup turbinado sugar, plus more for sprinkling on top
• 1/3 cup water
• 1 1/2 cups Hockley Valley Light Spelt Flour
• 1 tsp baking soda
• 1 tsp baking powder
• 1/4 tsp ground cinnamon, plus more for sprinkling on top
• pinch of salt
• 1 apple, very thinly sliced
Instructions:
• Preheat the oven to 375F.
• Beat the lard, applesauce, and sugar together until fluffy.
• Add the water and beat until smooth.
• Add the spelt flour, baking soda, baking powder, cinnamon, and salt, and beat until just combined.
• Transfer the batter to a lined 8-inch round cake pan lined with parchment paper and spread it out evenly.
• Arrange the apple slices on top in a circular pattern. Sprinkle more cinnamon and turbinado sugar on top.
• Bake for 25 minutes, or until golden brown on the outside. A toothpick inserted in the center should come out clean.
